Omelet – A Special Treat

Ingredients: (for one omelet)
2 Eggs
1 Tablespoon of milk
¼ Cup of finely sliced smoked salmon
Fresh dill finely chopped
¼ cup of mozzarella cheese

Whisk the egg and milk and pour it into a medium size, pre-heated frying pan with a fine layer of olive to ensure that it does not stick. Use a medium to low heat.

Place a lid on the frying pan until it is half cooked.

Add the salmon, dill and mozzarella cheese. Cook for about half a minute with lid on.

(you will know that the omelet is ready to do this by carefully lifting the edge)

Carefully fold the omelet in half and cook for another half minute.

Serve with fresh Rocket leaves and a slice of lemon.
