I have a couple of friends who are gluten intolerant, or dairy intolerant, and cooking for them always makes me think! One of my favourite meals is simple; and safe for all kinds of company:
Spend the money and buy a good piece of fillet, you won’t regret it. I grill this in an oven with a nice rub of spice, garlic, olive oil and salt, cooking it quickly so it’s still pink and tender inside. Slice into medallions and lay out on a platter.
Cut up a mix of vegetables, including sweet potato, baby marrows, carrots and sweet peppers. Rub with oreganum and olive oil and grill in the oven.
Place the vegetables around the fillet medallions and serve for a relaxed dinner with friends.
